Neckiye (Onbai's) and Zeynep (Ankarl) discuss making 'erite' - (fine macaroni). They make a rich dough with flour, fat, eggs, and water, roll it out v. thin,
then cut it into thin, tiny strips. The strips of the dough are then put in to soup, or in to the omlek with whatever else there is, and cooked slowly. A
favourite dish, they say - they speak of erite as one of the ways they cook eggs.
